Age alone is too misleading.
Running and outdoor brands usually provide their own charts because they know that a poorly chosen size affects performance and comfort. In running shoes, half a size more can prevent the toes from hitting the toe box on downhill runs or long sessions. In boots, the margin changes because sock thickness also matters. In sandals or urban footwear, by contrast, visual fit and support matter more than front space.
Men’s clothing: from the American scale to the European one
In men’s garments, conversion usually relies on letter sizes and chest or waist measurements. A US S usually corresponds, approximately, to an EU 46; a US M, to an EU 48 or 50; a US L, to an EU 52; and a US XL, to an EU 54 or 56. In shirts, the logic changes slightly because some manufacturers use neck and chest measurements, so a medium US size can vary quite a bit between a dress shirt and a cotton T-shirt.

The way you measure matters just as much as the final figure. In footwear, it is best to place the foot on a flat surface, with the heel firmly set and the pencil held vertically when marking the longest point. In clothing, a flexible tape should follow the contour without squeezing or leaving slack.
